EASY Chicken Curry

1/4 cup butter
1 small onion chopped
2 carrots julienned
1 stalk celery, sliced
sprinkle with 1/3 cup flour
*Mix well saute for 2 more minutes
stir in: 3 cups chicken broth
cook until thicken, stir occasionally

mix in small bowl:

1 tsp curry powder
1/2 cup evaporated milk
2Tbsp mayonnaise
stir contents of bowl into skillet

Add:
3 cups cooked chicken

Heat to serving temperature, stirring occasionally. Serve immediately. Feeds 6

**To be honest I didn't follow this recipe a whole lot. I just did the "sauce part". I threw carrots and celery into a skillet and started to saute them until I knew this is what I wanted to make. Anyway. Just put whatever type of veggies in a pan, saute them, add the sauce and chicken, and eat with rice. WAY EASY, fast and REALLY GOOD! oh, we added cashews and baby corn when we added the chicken that was delicious too. **

CRANBERRY CHICKEN

3-4 chicken breasts
2 T. soy sauce
2 T. butter
2 T. lemon juice
2 tsp. oregano
2 cloves garlic
1 can whole cranberry sauce.

Put all ingredients in crock pot. If chicken is frozen, on high for about an hour then on low until chicken is tender. If thawed, on low til chicken is tender.

Serve over rice.

Chicken Stroganoff

This is really yummy! I guess if you're not a mushroom fan you could just leave those out, but it won't be as good!
4 bacon strips
1 lb. chicken, cut up
1 med. onion
2 cloves garlic
1 pkg fresh mushrooms (the original recipe calls for 2 cans of mushrooms drained, but I detest canned mushrooms.)
1 1/2 cups chicken broth
1/2 tsp salt
1/8 tsp paprika
pepper to taste
1 cup sour cream (don't worry Darwin, you can't even tell it's in there - it just gives it a little zing)
2 T flour
In a skillet cook bacon until crisp. Remove to paper towels and drain some of the drippings, reserving 2 T, set bacon aside. When cool enough to touch, break up into small pieces. Cook the chicken, onion, garlic, and mushrooms until chicken is no longer pink. Add the broth, salt paprika, pepper and bacon back in. Cover and simmer for 10 minutes. Combine flour and sour cream until smooth; add to the skillet. Bring to boil, cook and stir for 1 minute or until thickened. Serve over egg noodles or rice, whichever is your family's preference.
